Barley Pilaf
Recipe type: warm side dish or cold salad
Serves: 8-10
Great for pot lucks, or use leftovers for lunches.
Ingredients
- 1 bag pearl barley
- 1½ cups Terra Beata always low sugar dried cranberries
- 1½ cups finely chopped fresh kale
- your favourite vinaigrette, or use recipe below
- 1 cup Holmestead Farm feta, crumbled
Instructions
- Cook barley according to directions on the bag
- Stir in dried cranberries and chopped kale
- Mix in just enough vinaigrette to make barley shiny
- Top with crumbled feta
- Homemade vinaigrette: whisk together 1 cup oil, ⅓ cup cider vinegar, 1 T honey, 2 tsp garlic powder, 2 tsp grainy mustard, 2 T any fresh chopped herbs. Makes more than needed for the pilaf. Store extra in fridge.
