Cranberry Lemon Muffins
Recipe type: QUICK BREAD AND MUFFINS
 
Ingredients
  • ½ cup melted butter or margarine
  • ½ cup sugar
  • 1 egg
  • 1 cup milk
  • 1¾ cups flour
  • 3 tsp baking powder
  • ½ tsp salt
  • 2 Tbsp finely grated lemon rind
  • 1 cup fresh or frozen cranberries
Instructions
  1. In large bowl, mix together first four ingredients in order given. In a separate bowl, combine remaining ingredients. Add the dry ingredients to the first bowl, stirring just until moistened. Fill greased muffin tins and bake at 325 F for 10 to 12 minutes. Makes 10 large muffins
