Homestyle Cranberry Sauce

Ingredients
- 3 cups cranberries (12 oz pkg), fresh or frozen
- 1 cup water
- ¾ cup sugar
Instructions
- Put berries and water in a saucepan. Bring to a boil. When the first few berries pop, stir in sugar. Continue to cook for a few minutes, stirring occasionally, until nearly all berries have popped. Bottle immediately and store, or (even better) serve warm.
- For Cranberry Orange Sauce, add peel of one small orange, grated on large holes of grater, when the sugar is added.
- For Cranberry Maple Sauce, replace sugar with ⅜ cup maple syrup and ½ cup brown sugar.

No-cook Cranberry Relish

Ingredients
- 3 cups fresh cranberries (12 oz pkg)
- 3 crisp apples
- 1 small orange
- ½ lemon
- 1½ cups sugar
Instructions
- Grate orange and lemon rind on the large holes of a grater. Reserve. Quarter the remainder of the orange and lemon, and remove any seeds. Quarter and core apples, but leave peel on. Chop orange, lemon, apples and cranberries coarsely in a food processor or grinder. Stir in sugar and reserved strips of orange and lemon rind. Chill for at least 3 hours. Stir before serving. Store in refrigerator.
